Vinification: Fermentation takes place parcel by parcel in temperature-controlled stainless steel, concrete, and wooden vats. Extraction is carefully managed through pumping-over and gentle punch-downs to preserve finesse and aromatic purity. Maceration length varies according to parcel and vintage conditions. Malolactic fermentation takes place partly in new oak barrels and partly in vats.

Ageing: Aged for approximately 18–22 months in French oak barrels, with around 100% new oak depending on the vintage. The élevage is designed to enhance complexity, texture, and longevity while preserving freshness and terroir identity.

Tasting notes: Deep and intense bouquet of blackberry, plum, violet, graphite, liquorice, cocoa, sweet spices, and crushed limestone. The palate is rich, layered, and concentrated, with velvety tannins, remarkable freshness, mineral tension, and an exceptionally long, elegant finish.

Temperature of service:  Served at 16-18°C

Food Paring: Ideal with roasted lamb, beef fillet, game dishes, truffle-based cuisine, duck, and aged hard cheeses.
