Packaging   1 x 6 bottle.

Vinification: a light pressing follows hand harvest, the free-run wine is separated and decanted through the process of natural sedimentation at low temperature.  An ageing period on the fine lees follows during months at temperature controlled in stainless steel tanks. Later a second fermentation takes place inside the bottle with the ageing on the yeasts for 36 months. The hand riddling process follows. At least three months in the bottle after the disgorgement, before the releasing on the market.

Ageing: 36 months on lees in bottle, plus 3 months post-disgorgement prior to release

Tasting notes: Delicate straw yellow color, with light greenish nuances. Fine and           elegantly persistent perlage. Fragrant scents of bread crust, with floral notes of broom and fruity hints of peach, pear, citrus fruits and Mediterranean scrub. Pleasant and creamy in the mouth, with a fruity return and almond sensations. The balanced acidity fills the palate with freshness, intensity and a long persistence.

Food Pairing: Ideal with gourmet aperitifs, shellfish, oysters, sushi, and fresh cheeses
