Vinification: Fermentation at around 28°C with frequent pump-overs (délestage) and maceration on skins for over 14 days in large vats, followed by complete malolactic fermentation
Ageing: Approximately 12 months, partly in oak barrels and partly in vats (blend depending on vintage), before refinement
Tasting notes: Ruby red colour. Aromas of intense red fruits with light spicy and chocolate notes. On the palate it is medium-bodied, with mature tannins, good balance, and a fruit-driven finish with spice and chocolate nuances
Temperature of service: Served at 16-18°C
Food Paring: Ideal with pasta dishes with meat sauces, grilled or roasted red meats, and medium-aged cheeses
