Description: Single Botanical Dry Gin is crafted using a meticulous, multi-step "compound and dry" artisanal method along the banks of the Piave River in Veneto, Italy. The production process relies entirely on raw, natural ingredients without any synthetic essences, chemical flavourings, or artificial colours.Base Spirit and Juniper Extraction The process begins with high-purity neutral grain alcohol. High-quality juniper berries sourced from the Trentino region are macerated (steeped) in this alcohol to extract their core aromatic oils and resins.
Slow Distillation the juniper-infused spirit is transferred to traditional distillation stills. It is distilled slowly at a gentle heat. This slow vaporization and condensation separate the pure alcohol and lock in the crisp, balanced baseline flavours of the juniper.
Lavender Infusion and Blending to achieve its signature bold, floral profile, the distillery uses a fragmented extraction method:
Sourcing: Natural, aromatic lavender blossoms are harvested from the local Montello hills.
Infusion: A portion of these lavender botanicals is distilled alongside the juniper.
Bain-Marie Extraction: Another portion of the lavender is infused separately in the spirit using a gentle bain-marie (water bath) method. This protects the delicate floral petals from burning and ensures the full depth of the fresh lavender aroma is captured without bitterness.
Blending: The distinct extracted fractions are carefully measured and blended back together into a single, cohesive batch.
Gravity Filtration and Proofing unlike mass-produced spirits that undergo forced, chilled, or chemical filtration, 400 Conigli uses an old-world artisanal gravity filtration system. The liquid slowly drips by its own weight through specially designed conical linen and cotton sieves. This preserves the fragile organoleptic profile and essential oils of the lavender. Finally, the gin is proofed down with pure water to an alcoholic strength of 42% ABV before being bottled in its signature 500 ml format.
