Vinification: Grapes are gently pressed and undergo fermentation in stainless steel tanks at controlled low temperatures to preserve aromatic expression. The wine is vinified reductively to maintain freshness and varietal purity, with no or minimal skin contact depending on vintage conditions.
Ageing: Short ageing in stainless steel on fine lees to enhance texture and complexity, followed by bottle refinement before release
Tasting notes: Bright straw-yellow colour with green reflections. Nose: White flowers, citrus peel, green apple, pear, Mediterranean herbs, and subtle saline notes. Flavour: Fresh and vibrant palate, crisp acidity, mineral-driven structure, notes of lemon, white peach, and sea breeze salinity, with a clean, persistent finish.
Temperature of service: Served at 8-10°C
