Vinification & Ageing: Careful parcel selection followed by fermentation in small stainless steel tanks and open-top fermenters. Maceration lasts approximately 20–25 days with gentle extraction to preserve finesse and aromatic detail. Malolactic fermentation occurs in oak.
Ageing: 18 months in French oak barriques, with a significant portion of new oak, followed by bottle refinement before release
Tasting notes: Intense ruby colour. Aromas of red berries, blackcurrant, raspberry, rose petals, violet, graphite, sweet spices, tobacco, and Mediterranean herbs. The palate is refined and linear, with vibrant acidity, precise tannic structure, mineral tension, and a long, elegant, persistent finish with balsamic and spicy notes.
Temperature of service: Served at 16-18°C
Food Pairing: Ideal with roasted lamb, grilled meats, game birds, truffle dishes, and aged cheeses.
